Cheese and herb scones are a delicious addition to any Beltane meal. They are easy to make and can be served as a side dish or as a snack. Here’s how to make them:
Ingredients:
- 225g self-raising flour
- 1 tsp baking powder
- 50g butter
- 50g grated cheddar cheese
- 1 tbsp chopped fresh herbs (such as thyme, rosemary, or chives)
- 150ml milk
- Salt and pepper to taste
Method:
- Preheat the oven to 220°C/200°C fan/gas mark 7.
- In a mixing bowl, combine the flour, baking powder, salt, and pepper.
- Rub in the butter until the mixture resembles breadcrumbs.
- Stir in the grated cheese and chopped herbs.
- Gradually add the milk, stirring until a soft dough forms.
- Turn the dough out onto a floured surface and knead gently.
- Roll out the dough to a thickness of 2cm and cut into rounds using a cookie cutter.
- Place the scones on a baking tray lined with parchment paper.
- Bake for 12-15 minutes until golden brown.
- Serve warm with butter.
